Recipe Of The Week – Tex-Mex Style Taco Rice!


This tasty & healthy crowd-pleaser is easy to make and usually a very popular dish for small kids! The required ingredients are quite simple and can usually be picked up at your local grocery store or supermarket. If you`re pressed for time and would like to make sure that your kids are easting their fair share of daily vegetables without having to cook separate dishes, this recipe is for you!

Ingredients List

The ingredients required for this recipe are listed below. You`ll need the following:

* Minced beef or pork meat
* 1 large carrot
* 1 large onion
* 4 small green peppers
* Sesame Oil (or vegetable oil is ok. I wouldn`t recommend olive oil for
this one as it might clash, not taste good, with red meat).
* 1 pack of mild Taco Powder

* Red Chili Powder / Red Chili Spices (optional if you don`t like spicy
* Garlic Powder
* Salt 
* Black Pepper

You can add additional spices if you like, but these are basically all that you`ll need to get started.

Cooking Steps:

Step #1: 

Finely chop the onions into small pieces.

Step #2: 

Put the chopped onions in a frying pan.

Step #3: 

Wash and chop the green peppers. Peel the carrot, then chop the carrot into fine pieces.

Step #4: 

Place the chopped green peppers and carrots in the frying pan with the onions, then add sesame seed oil (or vegetable oil) to the pan.

Step #5: 

Move the stir-fried vegetables to one side of the frying pan, then add the minced beef in the middle.

Stir-fry the minced beef away from the vegetables until the beef turns brown.

Step #6: 

Add your salt, pepper, and garlic powder to the cooked meat then mix the meat and the stir-fried vegetables together.

Next, add your taco powder to the mix and stir-fry if for about 2 minutes on medium heat.

Lastly, add your chili spice (to your spiciness level).

Step #7: 

Add the taco meat to a bowl of cooked white rice (or brown rice).

Meal Pairing Recommendations:

I recommend serving this dish topped with fresh lettuce, chopped tomatoes, salsa sauce, and cheese/melted cheese for full effect! It even matches well with Ceasar Salad or Thousand Island dressing.

Of course, you don`t need to use rice for this. You can also use basic Mexican taco shells or wraps for it instead. And as usual… it always matches very well with red wine or beer!

This is a very delicious meal for a late evening and serves around 4 people so have fun cooking for your family! ?
